Grilled Vegetable Skewers

½ cup Carrington Farms Garlic Flavored Liquid Coconut Cooking Oil

½ cup lemon juice

½ cup soy sauce

Pinch of salt

½ cup of sliced red bell pepper

½ cup sliced yellow bell peppers

½ sliced red onion

20 cherry tomatoes

½ sliced zucchini

½ sliced eggplant

Place all vegetables in a large bowl. In a small bowl, mix together Carrington Farms Garlic Flavored Liquid Coconut Oil, soy sauce & lemon juice. Pour over the vegetables. Cover bowl, & marinate in the refrigerator for 30 minutes. Place vegetables on skewers (if using wooden skewers make sure to soak first). Spray grill with Carrington Farms Coconut Oil Spray. Set grill to medium heat. Place vegetable skewers on preheated grill. Cook for 12 to 15 minutes. Enjoy!

Prep for National Pi Day March 14th!

Moms, Get IN on a piece of THIS Pi & get ready for 3/14/17 😉 This day in history celebrates the ratio of a circle’s circumference to its diameter, 3.14 – but what better way to celebrate an ironic-named holiday than to share in a yummy pie recipe, too! This recipe is a delicious (& healthy!) pie recipe from Viki’s Granola that is a PERFECT way to ring in Pi Day – or any day for that matter! 

Viki’s Granola Mixed Berry Crisp

Topping Ingredients:
•    ¾ cups all-purpose flour
•    ½ cup (packed) light brown sugar
•    1 cup Viki’s blueberry almond granola 
•    1 stick unsalted butter
Filling Ingredients:
•    4 cups frozen mixed berries (don’t thaw)
•    1/3 cup of sugar
•    1 tablespoon all-purpose flour
Directions: 
•    Preheat oven to 375oF.
•    Lightly butter oven safe ceramic bowl.
•    Place topping ingredients into a bowl, working the butter into the granola mixture. Once complete, set aside.
•    Place filling ingredients into a large bowl and mix thoroughly.
•    Pour the berry mixture into the buttered ceramic bowl.
•    Pour granola mixture evenly on top of the berries.
•    Bake for 40 minutes or until the topping is golden brown and the fruit juices are bubbling.
•    Let it rest for 15 minutes before serving.

Organic Matcha Pie


Ingredients for Crust, Filling, Glaze & Toppings

Crust:1 Graham Cracker Pie Crust

Filling:

8 oz. Cream cheese, softened

2 tbsp. Sugar

1/4 cup Eggbeater or 1 egg

1/3 cup Greek yogurt

1 tsp. Vanilla extract

2 tsp. Matcha green tea powder*

Glaze:

2 oz. White Chocolate

1 tbsp. Butter

1 tsp. Matcha green tea powder*
Toppings: Fresh Fruit (strawberries, blueberries, etc.) + chocolate to drizzle on fruit if desired IMG_4808
 Directions
1. Preheat oven to   325˚F
2. In a bowl, beat the cream cheese until smooth, scrape down the bowl as needed
3. Add sugar & beat for one minute
4. Add the yogurt & vanilla & mix just to combine
5. Sift in matcha powder & beat until smooth
6. Add eggbeater & beat until creamy, scraping the sides of the bowl once
7. Pour filling into pie crust
8. Rap the pan to release big air bubbles from the batter
9. Bake for 45 minutes, or until center is nearly set
10. Allow to cool at room temperature for an hour
11. For the glaze, melt white chocolate in microwave
12. In a separate bowl, melt the butter
13. Incorporate the melted butter & white chocolate together
14. When the mixture is smooth, sift in the matcha powder & mix until all combine
15. Pour glaze over cooled cake & spread it around evenly
16. Cover it with foil & refrigerate for 4 hrs or over night
17. Cut into slices or bars & garnish with toppings
*2 tsps. of Matcha in the batter gives a subtle flavour to the batter, if you like a strong & rich tea flavor, add more to your liking!
Yields 8 servings

MotherStucker MADE: Pork-U-Pine Pizza

Mr. Papa Pizza man should quit his day job – MotherStucker’s got THIS! In typical MotherStucker style this recipe is easy, quick (30 minutes or less!), healthy & delish! If you are new to this (Welcome OtherStuckers!), I only publish MADE recipes that WOW! Last week the MotherStucker MADE:  Open Wider – Pork Sliders delighted the whole crew. With A+ success using the Smithfield Products I found at Food Lion, I decided to make a go of it again – this time making Pizza!  Below are 2 Pork-U-Pine Pizza (Pork+Pineapple) versions sure to please & perfect for a family feast!

Ingredients

  • Smithfield Peppercorn & Garlic Tenderloin (on sale at Food lion $4.99 – $9.99 through September!)
  • Smithfield Garlic & Herb Tenderloin (on sale at Food lion $4.99 – $9.99 through September!)
  • 2 rolls of ready made pizza dough (refrigerated)
  • 2 eggs
  • I ball of fresh mozzarella cheese, 1 wedge of brie cheese cut into small pieces
  • Additional toppings of your choice!  MotherStucker used Jalapeños & Diced Red Pepper
  • Pineapple Tibits ( 1 can 15.25 oz – drained is enough for 2 pizzas & snacking!)
  • 1/2 cup of “red” (tomato based) BBQ sauce & 1/2 cup of “yellow” mustard based BBQ sauce.
  • 2 tablespoons of EVOO

Directions

  1. Prepare Smithfield Tenderloins as described on the package.  MotherStucker recommends throwing them on the grill!
  2. After letting the Smithfield Tenderloins “rest” for a few minutes cut meat into thin slices (approx 15 – 20 per Smithfield Tenderloin).
  3. Prepare (roll out + pre-bake for 5 minutes) pizza crusts per package directions. Spread 1 Tablespoon of EVOO on each crust before pre- baking.
  4. Assemble!  #1.  Load first pizza crust with “red” BBQ sauce, slices of Smithfield Peppercorn & Garlic Tenderloin, pieces of brie cheese & pineapple tidbits.  BAKE. #2.  Load second pizza crust with “yellow” BBQ sauce, slices of Smithfield Garlic & Herb Tenderloin, pieces of mozzarella cheese, pineapple tidbits, jalapeño slices, diced red pepper, etc.  BAKE.
  5. Fry 2 eggs while pizza is baking.  Why?  Because you only live once.  That’s why.
  6. Remove both pizzas from the oven.  Top with fried egg.  Slice.  Eat.  Go to heaven.

MotherStucker MADE: Open Wider – Pork Sliders!

In typical MotherStucker style this is easy, quick (30 minutes or less!), healthy & delish! If you are new to this (Welcome OtherStuckers!), I only publish MADE recipes that WOW! Mr. MotherStucker & I took these Pork Tenderloin Sliders (2 versions!) to a weekend get-together where they were A+ received!  Will be making again for a family weeknight feast!

  1. Prepare Smithfield Tenderloins as described on the package.  It was a beautiful weekday & MotherStucker threw these beauties on the grill!  The whole neighborhood was salivating & I was done in no time.
  2. After letting the Smithfield Tenderloins “rest” for a few minutes cut meat into thin slices (approx 15 – 20 per Smithfield Tenderloin).
  3. Slice buns rolls in half.
  4. Assemble sliders! Bottom bun, then 1 -2 slices of Smithfield Tenderloin. MotherStucker IndiderTIP: *** Try topping the Smithfield Peppercorn & Garlic Tenderloin with Pimento Cheese before applying top bun. Similarly, try topping the Smithfield Garlic & Herb Tenderloin with cole slaw before applying top bun! BOOM 😉
